The lack of a proper Filipino restaurant abroad compelled Andrew to put up XO46 Heritage Bistro in 2010. Clearly, Filipino cuisine needed a showroom to shine. Calling on his family’s culinary treasure trove of dishes, Andrew spent the better part of the year in intensive research and development. He also borrowed a page from the dinner service at his aunt’s house - white gloves, beautiful tablescapes, and a distinctly "honorific" style of service that XO46 is now known for.
With 5 branches located in Valero St., Salcedo Village, Makati, Unit L220 2nd Level Century City Mall, Makati City, Estancia Mall Capitol Commons, Pasig City, SM Aura Premier, Taguig City and S'Maison, Conrad Hotel, Pasay City - the group’s flagship restaurant XO46 Heritage Bistro, was built to showcase Filipino cuisine in a different environment - one where both locals and foreign tourists and expatriates could go to truly appreciate the fine nuances of our local cuisine.
XO46 celebrates tradition and the old slow way of doing things.
A nationalist at heart, Andrew always believed that Filipino cuisine had a place among the world’s great cuisines. It would only be a matter of time. The local market also needed a new perspective on local cuisine. The "lutong bahay" and "turo-turo" styles had to evolve.
Filipino cuisine is distinct in the region. It has a decidedly Asian face by virtue of its ingredients and certain cooking techniques, but it also has undeniable Spanish influences which make it unlike anyother in the region. The Filipino palate is also unique in that we favor sweet, sour, salty and spicy all in one mouthful. After being under the radar for so long, the likes of Anthony Bordain, Bobby Chin and Andrew Zimmerman have singled out as the "next big thing".
The couple’s (Andrew and Sandee) efforts to uphold and enhance Filipino cuisine hasn’t gone unnoticed. Tattler Magazine counts XO46 as one of its best restaurants in Asia, Esquirre Magazine also cited XO46 ast one of the 10 best restaurants in the country, as with Dine Asia Magazine’s top 100 food establishments in Asia.
A new XO46 Heritage Bistro recently opened in S'Maison, Conrad Hotel, Pasay City to rave reviews. Soon it will open its doors at the Fort and Ortigas Center as well.
